詳解，不知道中國麻將怎麼開牌的菜鳥們都來看看吧~牌碼好以後，莊家就要帶頭起牌。在哪一方的哪一墩開始起牌，不是由莊家任意決定的。否則，他就可以在砌牌的時候作弊，從而使自己拿到一手好牌。因此，習慣上已經形成了一條規定：在起牌之前，必須通過擲骰子來決定從哪一方的哪一墩開始起牌，此即稱為開門。
先由莊家擲一次骰子，擲出兩隻骰子的點數之和來決定開門的方向，並由該方向的人擲二次骰子。決定第二次擲骰子的口訣是：五、九自手，二、六、十過，三、七、十一對門，四、八、十二到底。即莊家第一次擲的是五、九點，那麼第二次還是自己擲；如是二、六、十，則是下家擲；如是三、七、十一，則由對門擲；如是四、八、十二，則由上家擲。
然後把兩次骰子的點數相加，即為從開門方向由右至左留下的墩數。如莊家骰子的點數是七，對家骰子點數是五，7加5是12，就從對家一方牌裏從右至左數12墩牌。這第十二墩即為「槓頭」。莊家從第十三墩開始起牌。如果打的是素麻將，每家只砌17墩，對於起牌，還有一套口頭禪。如：十，三家拿了還剩一。意思是説，二次骰子加起來是十點，17墩除去10墩，莊家、第二家、第三家各拿去兩墩後，就只剩下一墩了。再如：一十一，剛夠三家一把齊；一十二，第三家一邊拿一；一十三，莊家、二家兩把幹；一十四，莊家拿了只剩一；一十五，剛夠莊家拿夠數；一十六，莊家兩頭湊；一十七，莊家轉彎開始提；一十八，過一開始拿；一十九，兩墩以後才拿走等。拿牌順口溜還有一種説法。逢十末家湊，遇一三人有，出二拿剩三，見三兩把幹，看四二剩一，擲五一次擼，六是莊家湊，七是轉彎提等。

起牌又叫「抓牌」、「拿牌」。開門以后庄家起槓頭後兩個序位的牌兩墩。若槓頭為第12墩，則莊家從第13墩位起牌，起13、14墩共四張牌。然後，莊家右手一家、對家、莊家左手一家依次順着各起下兩個墩位的牌。接上例，莊家起了13、14墩牌後，右手一家起15、16墩牌，對家起17、18墩牌，莊家左手一家起19、20墩牌，如此循環起牌。每家各起三次，即各起12張牌以後，莊家再起一張並跳一墩再起一張，稱之為「跳牌」。其他各門再依次各起一張牌。起牌到此完畢，莊家共有14張牌，其他各家各有13張牌。打麻將的全過程，存在兩種相反方向並用的問題。即：凡是對人來講的，如通過擲骰子定位、定莊、開門、摸牌、打牌和輪莊順序，都是從左至右，按逆時針方向進行；凡是對物(牌)來講的，如數墩、拿牌前進的方向，都是從右至左，按順時針方向進行。二者不可混淆。這是人們長期以來形成的規矩。
